A very delicious dessert recipe, with a lightness and smoothness on the palate is called Îlles Flotants. Or, according to the cook who taught me, Ana Maria Moreira, it can also be called: clouds in the sky. Pure poetry right? Wait until you taste it.

A variation of the recipe in its French version takes vanilla instead of cinnamon.

Îlles Flotants

6 eggs
4 tablespoons of sugar
1.2 L of milk
4 cinnamon sticks
150 ml condensed milk
150 ml of cream

Preparation mode:
Beat the six egg whites with 4 tablespoons of sugar, bring the milk to a boil in a pan with the cinnamon sticks. And add 1/2 can of condensed milk.
After boiling, take spoonfuls of white and put it in the milk, to cook, repeat the operation: turn and take, and go on doing this process until the egg whites are finished. When you’re done, turn off the heat and leave the milk in the pan. And reserve cooked egg whites in a deep container where they can be served.
With the help of a sieve, strain the 6 egg yolks and beat well in the mixer. Add this yolk in the warm milk of the pan, turn on the heat and stir constantly. Close to the boil, turn off the heat and continue stirring (if you get lumps, beat in a blender), add a little less than the contents of a cream box. And pour this yellow and tasty cream over the whites that are already in the serving container.
Put in the refrigerator and serve when it is cold.
