7 years ago I cooked in Bangkok, the capital of Thailand for the “Brazilian Food Festival”. A series of activities to promote Brazilian cuisine. It started early in the kitchen of the Centara Grand Hotel in the Thai capital. In addition to working hard to produce Brazilian dishes for the event, we took the opportunity to do some gastronomic expeditions around the city to learn more and locally about Thai cuisine.

Chef Thiago Marcello Bettin from Vale do Paraíba, who was there with me, took a very delicious dessert, an icon of the Northeast of Brazil: Bolo de Rolo – an icon of the Brazilian Confectionery.
The recipe is hard work, but it is not at all complicated, requiring time and expertise.
You can do it at home, but only practice will make perfect, come on!

Roll Cake:
260 g of refined sugar
260 g unsalted whole butter
1 vanilla bean
8 eggs (yolks and whites separated)
260 g of wheat flour
150 g of crystal sugar for sprinkling
300 g of guava jam

Way of preparing:
1- Beat the butter with the sugar, the vanilla (only the seeds) and the egg yolks, until whitish (in a mixer);
2-Stop beating and add the sifted flour and sugar slowly, mixing well;
3- Then carefully add the beaten white snow;
4- grease parchment paper on a baking sheet, or use silpat (which is an oven-safe silicone film that helps the dough not stick to the bottom of the pan), spread the dough with the help of a spatula, so that cover all the silpat, or parchment paper and stay with the very thin thickness. You will have dough to make 4 to 6 medium-sized baking sheets;
5- Bake in a preheated oven at 170 ° C for about 10 minutes, until the dough browns a little;
6- remove the baking sheet from the oven, turn it on a damp cloth, sprinkled with sugar, spread a thin layer of the jam and roll the roll cake, as if it were a roll;
7- the Roll cake is ready, serve it cut in very thin slices, as we traditionally find on Recife tables.
8- the Roll cake lasts up to 1 week in the refrigerator.
