Cerrado

The gastronomy of the Cerrado in a 5-day expedition in Pirenópolis.

Super aromatic ingredients, seasonings and techniques developed by incredible people and a surprising nature. Food Safaris Cerrado is a trip designed by Chef André Barros to show the best of the gastronomic culture of Pirenópolis and the region. Staying in a boutique hotel is also a unique hospitality experience.

Day 1

The gastronomy of the Cerrado in a 5-day expedition in Pirenópolis.
Reception at Goiânia Airport (GYN), our team will be waiting for your arrival on one of this morning’s flights (we suggest scheduling a flight arriving by 11am). Once we have everyone on Goiás soil, we will board the transport towards an organic Cacharia. We will be welcomed with a tasting to whet your appetite for lunch. The restaurant has a beautiful view and serves a special menu for us on this day.

Arrival in Pirenópolis around 3pm, check-in at our address over the next few days and rest. Group meeting in the garden at the hotel restaurant for happy hour and welcome chat.

Day 2

We will leave after breakfast to visit a farm dedicated to the sustainable conservation of natural resources in a Cerrado area with lush primary riparian forest. We will walk through the environmental reserve, learn details about the local biodiversity, as well as understand the relevance of the Cerrado with other Brazilian biomes.
At the end of the morning we will be welcomed at the farmhouse with a brunch that turns out to be a wonderful gastronomic festival with almost 50 items with unique textures and flavors. We will return to the inn to rest. At the end of the afternoon, we will walk through the historic center of Pirenópolis with our guide who specializes in regional history and culture. We will walk through the streets and alleys to see the Main Church, Bonfim Church, Town Hall and the Divino Museum Prison; Teatro de Pirenópolis, Cine Pireneus and observe other buildings in this bucolic setting.
Free dinner & overnight stay

Day 3

We will set off at 10 am to a farm dating from the end of the 18th century, listed as a National Heritage site as it contains an extensive mansion and several stone walls built by enslaved people. Owner Dona Telma Lopes welcomes us to tell us the details of the architecture, as well as the history of the farm and all the cultural influences it has housed since its construction. This chat is accompanied by a brunch that aims to value regional culture, considering not only the ingredients from the farm but dishes with indigenous, African and Portuguese influence recorded by the family since the Gold Cycle in Goiás. Among them are the Brevidades (a cake made with cassava starch, eggs and sugar), the Senzala cake (made with hominy and baked in a banana leaf) and the Pau-a-pique (a variation of beiju with coconut milk).
In the afternoon we will have the opportunity to bathe in one of the waterfalls in the region.
Free dinner and rest.

Let’s enjoy the delicious room at this hotel and have breakfast a little later. We will leave late in the morning to discover the Pyrenees Route where we will experience two incredible gastronomic moments. Our first stop will be at a winery, where we will have a winemaking experience in the high-altitude Cerrado. Our walk through the vineyard will be highly informative as we will be accompanied by the farm’s technicians. After a delicious lunch served amidst the greenery, we will rest under the shade of trees.

The second visit will be to a dairy farm whose owners are Swiss-Brazilian. We will taste his art with cheeses like Sbrinz, Brie, Gruyère and other surprises. Return to the hotel in the late afternoon and rest.

Dia 5

Check-out after breakfast and departure to Goiânia to catch your return flight. We suggest booking a flight from 2pm onwards. Farewell!
