Unlike other regions of the world where cuisine and human action helped to map flavors, biomes in Brazil are extensive, at least as far as we started to classify them and to what extent our vast geography shapes them.
The Pantanal region is a unique spot of physical and human characteristics that preserves knowledge and flavors. Nothing better than a cookbook to perpetuate this notion.
With an eye on it this week, we created the instagram page @cozinhapantaneira, aiming precisely to give an interactive and real-time voice to my new book: “Cozinha Pantaneira: Comitiva de Sabores” which is in pre-launch by Editora BEĪ’s website. The book is an initiative of Documenta Pantanal and has texts by Cristiana Couto. Photos by Luna Garcia and preface by Chef Mara Salles. In addition to having the presentation of the famous gastronomic critic Josimar Melo and a special text on meat by professor Ricardo Maranhão.
